My mom found her old diaries recently, most of them are from when she first met and got engaged to my dad and the first couple years of their marriage.
One of them starts with the day I was born.

My mom was a new mother then, and now, 22 years later, here we are! She’s still my mom, still loves me so much, and she never fails to show it to me with everything that she does. She makes fun of me and sometimes says I was the ugliest baby she ever saw, but HAH! This proves she thought I looked like Snow White. Then again, she also thought I looked sweet and nice.
22 years changes a lot, I guess.
But it doesn’t change the fact that she’s still the best mom. EVER.
Happy Mother’s Day 엄마!
My sister and I planned out a brunch for my mom. We were supposed to wake up at 7 and start cooking. Which we did, but when I woke up, we heard sounds coming from downstairs. What. The. Eff.
Out of all days that my mom decided to go to church on Saturday instead of at 8 a.m. like she usually does, she chose Mother’s Day to stay home on Sunday morning.
I swear she does these things on purpose sometimes.
But it’s okay. We forced her into her room and told her to watch TV until she was allowed back out.
Now, you might be thinking there’s nothing baked or sweet in these photos. Like… What do people usually make for their moms on Mother’s Day? French toast? Pancakes? Mimosas? Coffee cake?
Momma Kim doesn’t like sweets however, therefore, we went with her favorite breakfast food – vegetable omelets, hash browns, and black coffee. My mom’s a healthy beast.
About 4 servings
2 medium russet potatoes, shredded
1/2 medium onion, finely chopped
1/4 cup all-purpose flour
oil for frying
Wash the shredded potatoes until the water is clear. In a large bowl, mix the potatoes with the onion, egg, and flour until everything is evenly coated. You can salt and pepper the mixture if you like.
Put enough oil in a large skillet to coat the bottom. Place the hash brown mixture in rounds about half an inch thick and fry until browned and crispy on each side – about 5 minutes per side. When frying, if the inside is still kind of raw, cover the skillet until the hash browns are ready to flip.
About 4 servings
1 green bell pepper, diced
1 medium onion, diced
One cup of button mushrooms, sliced
1/4 cup milk
Salt and pepper to taste
1 handful of Swiss or mozarella cheese
Coat the bottom of a skillet with oil or Pam and saute the vegetables until soft and tender – about 5 minutes. While the vegetables are cooking, beat the eggs with the milk, salt, and pepper.
When the veggies are done cooking, set them aside in a large bowl. Spray the bottom of the skillet again with Pam.
Add the egg mixture and cook the egg for 2 minutes or until the eggs begin to set on the bottom of the pan. Gently lift the edges of the omelet with a spatula to let the uncooked part of the eggs flow toward the edges and cook. Continue cooking for 2 to 3 minutes or until the egg is almost cooked.
Place the vegetables and cheese if you want (I like my cheese on the outside) inside and flip one side of the omelet over the other. Let cook for a minute or two longer and serve with hot sauce and ketchup and hash browns :)
6 slices of sourdough bread
1/2 stick butter, softened
3-4 cloves garlic
Preheat oven to 425 degrees. Mince garlic in a food processor. Add softened butter and pulse until mixed. Spread garlic butter mixture on both sides of sourdough bread.
Arrange bread on a baking sheet and bake for 10 minutes until butter is melted and golden. Broil for about 30 seconds to a minute until crispy and slightly toasted – be careful not to burn! Pull out of oven and sprinkle with parsley before serving.
But of course, we must get hungry again.
My dad grilled up some burgers, onions, and buns on his brand new grill for dinner. He’s ecstatic about this thing, so we might as well give him every chance possible to use it, right?
I love burgers.
I’ve eaten a lot of burgers in LA, but nothing tastes better than a classic burger that was charred in your backyard.
And by classic burger, this is my classic burger with grilled onions, tomato, lettuce, Thousand Island sauce. Oh, and don’t forget GUACAMOLE. Preferable guacamole with spicy pico de gallo mixed in.
This with garlic fries and a couple of beers, and it really hit me that….
